Chicken and Mushroom Pie

I’m long over due for having a recipe entry. For those that haven’t seen my recipes before, they’re not meant to be haute cuisine – just stuff I’ve cobbled together for an easy, hassle free dinner. If you’re already an excellent chef who knows how to experiment, then they probably aren’t going to be useful to you.

Anyway, we’ve been having the occasional frozen chicken pie for when I can’t be bothered to do much cooking, but the quality seems to be degrading everytime I buy them – this is my attempt at recreating them while having more control over the quality of meat that goes in ‘em.

Chicken and Mushroom Pie

Ingredients

295g can of condensed mushroom soup
½ of the above emptied can full of milk
3 chicken breasts, diced
150g closed cup mushrooms, quartered
1 tbsp olive oil
a sheet of ready rolled puff pastry
a bit more milk to brush on the top

Method

1. Preheat oven to 220°C (425°F Gas Mark 7)

2. Fry the diced chicken in a pan with the olive oil for around 5 minutes then add the mushrooms and fry for 5 minutes more.

3. Add the soup and the milk, stir in well and heat for a couple of minutes.

4. Pour contents into a 1.2L (2 pint) pie dish.

5. Stick pastry on top, cut around edges so that it matches the shape of the pie dish and either chuck away the spare or use it to create pretty patterns on the top if you’re feeling flush with time and creativity. Put a little hole in the top, press edges with a fork to seal and brush with milk.

5. Bake in the oven for about 30 minutes.

6. Serve with new or mashed potatoes and lots of veg.

Serves: 4.

    Are you open to suggestions? A sauteed onion and using half and half chicken breast and thigh: the latter is much juicier.
    Just cos I love to “help”!

    Mmmm, sounds good. I will have to try it. I am new to cooking, though, and I’m not clear on the puff pastry, though (first of all, we probably call it something else, in my region if not in my whole country). I wikipedia’d it, so I kind of understand what it is, but I’m curious if you buy it or make it yourself. (Nobody in my household has ever made bread products, so I really have no idea about that, but I suppose I should probably try eventually.)

    Yeah, this sounds really good, and I will definitely try it if I can figure out this pastry thing.

    Anji: don’t you have condensed soup where you are? :( It’s fabulous stuff.

    mollyemo: well I get it frozen in a packet ready rolled :) You can make it yourself fairly easily but it adds extra time, and I’ve always found the quality of frozen pastry fairly good so for many things I don’t bother. Puff is just pastry that puffs up nicely on the top – you can also buy shortcrust pastry frozen.

    Do you know, I stood in front of the larder this morning with a tin of Heinz cream of tomato soup in my hand thinking I’m sure I could make a nice dish with this, maybe with chicken… or with mushrooms… or with mushroom soup. And blow me down, here you are with a recipe. Will let you know how it turns out!

    Ooo spooky, Daisy – hope it went well :) If it’s not a condensed mushroom soup you’re using, probably best to skip the added milk so it doesn’t get too runny.

    Thankyou so much! i have been looking for at least 10 minutes to find a chicken pie recipe! i have to find a puff pastry food for Food technoglogy at my school! and i am taking it for GCSE so i hope they will be impressed!

    This sounds like such a easy receipe Im so glad I found this as its hard to find easy recipes with simply ingredients. I live in Turkey and you cant buy ready made things here that i used to in UK so im glad i found this one and I will try this over the weekend!!

    Well this is my first time to use ready made puff pastry or any pastry at all…also my first time to cook a pie…..i have bought the ingredients and i am going to give it a go. any tips???

    And by the way the reason why i was searching for this recipe is cause i had left over turkey from the xmas party and i needed to make use of it. i could not bare to see it go to waste.

    Well, I have just tried your recipe tonight and it was fabulous. Bla is clearly an idiot who can’t follow simple recipes otherwise Bla would have found it great too. Obviously lack of ANY cooking skills created something awful. Get that BLA ? Don’t blame the recipe, blame the chef!

    Tried this last night and it was great. I had to change a few ingredients…. for those who can’t get condensed mushroom soup (there wasnt any at my tesco’s) I used Baxters mushroom potage and instead of milk added some double cream and also the tarrogon… delicious a real hit with the family!

    hi im 17 and I wanted to make a pie had chicken and mushrooms so thought id make a pie with boiled potatoes and veg for my mum who is always working I made it and she loved it I would recomend this dish to everyone exept I used real pastry.

    Have made this myself before and making it again in a min. Very easy and tastes so much better than those 23% (!) meat content shop ones.

    I’m new to cooking and this looks fairly easy to master. Have just bought 2 new ramekins on my lunch break for me and my boyfriend, so we’ll see how I get on.
